The Cheesecake Bars are done....

My daughter has been bugging me to make cheesecake, but my son wants cookies. Me? I wanted to make.... NOTHING. I'm just in a funk this week and really don't care. So I gave in and make cheesecake bars - hopefully I can make everyone happy. And I'm happy because they are so easy.

Cheesecake Bars (EASY!)


1 box yellow cake mix (dry)
1 egg
1/3 c oil

Mix until crumbly. Save 1/2 cup out and put the rest into a 9X13 inch pan you've sprayed with Pam or greased. Bake the crust at 350 for 15 minutes. While it's baking make the filling.

8 oz. cream cheese (softened)
1/3 c sugar
1 egg
1 t lemon juice
1/4-1/2 t dried lemon zest (optional)

Beat until smooth. Spoon and spread over the baked crust. Sprinkle the reserved crumbles on top and bake an additional 15 minutes. Cool & chill completely in the refrigerator.

If You Give a Mom a Muffin

If you give a Mom a Muffin

If you give a mom a muffin,
She'll want a cup of coffee to go with it.
She'll pour herself some.
The coffee will get spilled by her three year old.
She'll wipe it up.
Wiping the floor, she will find some dirty socks.
She'll remember she has to do some laundry.
When she puts the laundry in the washer,
she'll trip over some snow boots and bump into the freezer.
Bumping into the freezer will remind her that she
has to plan supper for tonight.
She will get out a pound of hamburger.
She'll look for her cookbook. (101Things to Make With a Pound of Hamburger.)
The cookbook is sitting under a pile of mail.
She will see the phone bill which is due tomorrow.
She will look for her checkbook.
The checkbook is in her purse that is being dumped
out by her two year old.
She'll smell something funny. She'll change the two year old.
While she is changing the two year old the phone will ring. (Of course!)
Her five year old will answer it and hang up.
She remembers that she wants to phone a friend to come over for coffee on Friday.
Thinking of coffee will remind her that she was
going to have a cup.
She will pour herself some.
And chances are,
If she has a cup of coffee,
Her kids will have eaten the muffin that went with it.

Wet Oatmeal Kisses

“The baby is teething; the children are fighting.
My husband just called and said to eat dinner without him.”
One of these days you’ll shout;
“Why don’t you grow up and act your age!”
and they will.
Or “you guys go outside and find yourselves something to do... and don’t slam the door.”
and they won’t.

You’ll straighten up their rooms neat and tidy...
bumper stickers discarded... spreads tucked and smooth...
toys displayed on the shelves... hangers in the the closet... animals caged and you’ll say out loud; “Now I want it to stay that way,” and it will.

You’ll prepare a perfect dinner with a salad that hasn’t been picked to death
and a cake with no finger traces in it
and you’ll say, “Now there’s a meal for company,”
and you’ll eat it alone.
You’ll say, “I want complete privacy on the phone. No dancing around,
no pantomimes, no demolition crews. Silence! do you hear?” and you’ll have it.

No more plastic tablecloths stained with spaghetti, no more anxious nights under a vaporizer tent, no more dandelion bouquets, no more iron-on patches, knotted shoestrings, tight boots.

Imagine a lipstick with a point, no babysitter for New Years Eve, washing clothes only once a week, no P.T.A. meetings, carpools, blaring radios, Christmas presents out of toothpicks and paste.
No more wet oatmeal kisses. No more toothfairy, giggles in the dark, or knees to heal.

Only a voice crying, “Why don’t you grow up?”
and the silence echoing,
“I did”.

Hey - Make Blueberry Pie Tonight for Dinner!

I have finally given into the requests of my children and husband to get a blueberry pie made. There is a reason the saying "easy as pie" exists... it really IS easy. But making the stupid pie crust is such a pain sometimes. Yes... I know they SELL pie crusts. But then it wouldn't really be homemade in my book now, would it? And NO I don't hold it against you if you DO buy yours. I'll be happy if you do! I just want you to make your family blueberry pie. :)


BLUEBERRY PIE


3 pints blueberries - cleaned and stems removed or frozen
2 T fresh squeezed lemon juice
1/4 c all purpose flour
1/2 c sugar (I use a mixture of brown and white)
1/4 t cinnamon
2 T butter, cut up

A double pie crust (I don't have time to post the recipe - so use your recipe or just buy the canned or frozen version).


Mix the ingredients together in a bowl and then place in the bottom crust. Top with the cut up butter and then carefully place the top crust over and crimp or use a fork to seal the edges. Slice a pretty star shape on the top with a knife or fork to let steam escape. Bake at 425 for 20 minutes and then lower the temperature to 350 for another 30-40 minutes.

Let cool and serve with vanilla ice cream or fresh whipped cream.

The Happy Housewife is here with a recipe!

It's SPRING time people! And that means rhubarb. Yummy rhubarb! This recipe was handwritten on a piece of paper and given to me by a dear friend from Owatonna, MN. I made sure NOT to copy the recipe to my files in my hand or by typing. I have the lined notebook paper she gave me and that makes it more special as the years go by.

Rhubarb Custard Cake

1 pkg yellow cake mix
4 C chopped fresh or frozen rhubarb
1 C sugar
1 C whipping cream


Prepare cake batter according to package directions. Pour into a greased 13x9x2 inch baking dish. Sprinkle with rhubarb and sugar. Slowly pour cream over top. Bake at 350 degree's for 40-45 minutes or until golden brown.

Cool for at least 15 minutes before serving. Garnish with whipped cream if desired.

101 Uses for Duct Tape and More....

Tonight is BabyGirls very first prom. So when blogging about prom one of my first thoughts was to blog about prom dresses.

First off, remember this chick? She worked hard to make this sequined dress herself. A kazillion sequins later they wouldn't let her in. She danced her first and last dance on the sidewalk outside the school. She then turned around and sued them. And won.



Ok, some of you have seen these already but for those of you who haven't, be prepared to have your socks knocked off. To go shopping for their dresses and tuxes, the following kids did their browsing not at the local dress shop nor mall... but at Lowes and Home Depot.

No, I'm not joking. Their dresses and the guys suits and tuxes are completely and utterly made out of duct tape. DUCT TAPE.

About 5 years ago I saw my first duct tape dress and bowed down to their creativity. I tried to talk BabyGirl into shopping for her dress in the adhesive aisle of Lowes, but she would have none of it.


DUCT TAPE, PEOPLE... PURE DUCT TAPE!





REMEMBER: these are all made out of duct tape. Is this not creative or what!??






We're still looking at duct tape clothing here, people.

I hope she played a lot of freeze tag as a kid because she is going to have to stand completely still and not move allll night. The first time she turns to get some punch or lifts her arm to wave at a friend she is going to pop right out of there. This dress sold for $495 btw.






The middle one isn't that bad other than the fact she better not drop her lip gloss because no one wants to see her bend over to pick it up. But the one on the left and the one on the right? Hope they shaved their bikini lines this morning.





"Omg, like, I totally just stole this night gown out of my mothers dresser drawer and put on some clear high heels and thought, cool! I'll call it a prom dress!"

(Seriously people... I have the shorter version of this 'dress' and it was sold as a night gown. As in, pajamas. Night wear. Sleep wear.)



"Prom? Ohhh. We thought it was a COSTUME party. Our mistake."








DOES THIS CHILD *NOT* HAVE A MOTHER???? Who in their right mind would let her out of the house this way? That is not EVEN a dress. It's just not.

You're feeding me what??????

Tonight I was dinking around on internet and found that 3 of my pages have been archived at archive.org. (Who knew!?). Anyway! I found this from almost exactly 1 year ago and I had to laugh. I had forgotten all about this until I read it again.

You know... I'm having a few regrets about deleting all my archives from 2004-2006 after all! At least I know archive.org has a few of them anyway.

CK: "DITCHES!? It's a ditch weed!? You're feeding me ditch weeds!?"
